This setting increases the chances that the hitter in question will be pinch-hit for, when facing the corresponding type of pitcher. At this point, I'm not sure exactly which situations this affects, though I doubt that it would take effect as early as the 1st inning of a game.
There should NOT be a way to make it 100%...a manager has to manage a game as it plays out. If a righty starter gets knocked out in the 1st couple of innings and is replaced with a lefty the team probably has a lead and "saving" players for later in the game would be a better choice than to replace players 100% for platoon reasons. Also, removing players in the 4th through 7th inning for platoon reasons might not be the best play either. Depending on score, bench depth, and game circumstances (i.e. 2 outs and nobody on) a platoon player may stay in to face the wrong pitcher.
